How to make Mediterranean Lentil Salad.
This recipe can serve 4, and is ready in 5 minutes.
|Ingredients||What They Look Like|
|1.00 cups cherry tomatoes|
|1.00 cups dried green lentils|
|0.25 cups fresh basil leaves|
|1.00 cloves garlic|
|6.00 ounces goat cheese|
|0.50 cups kalamata olives|
|3.00 tablespoons lemon juice|
|0.25 cups olive oil|
|4.00 servings salt and pepper|
Bring 8 cups water to a boil in a large saucepan over high heat.
Add lentils and garlic. Reduce heat to medium-low, then simmer until lentils are just tender, 15 to 20 minutes.
Drain in a strainer and place in a large mixing bowl.
Add tomatoes, olives, basil, olive oil and lemon juice to bowl and toss to coat. Season with salt and pepper. Sprinkle with goat cheese and serve warm.
